Raw chocolate is chocolate which is produced in a raw or minimally-processed form. It is made from unroasted (sun-dried) cacao beans and cold pressed cacao butter. It represents a fast-growing segment of the chocolate industry. Sugars are not used. Sugar and heat can actually deplete many of the nutrients found raw cacao. Dairy products are not added to raw chocolate.

Raw chocolate has thousands of living enzymes that have been preserved through the chocolate’s processing.
